How many tons is a yard of sand?

About 1.35 tons per cubic yard for typical damp sand — moisture swings it between 1.2 (dry) and 1.5 (saturated). Suppliers sell by the ton; order in their unit.

How much sand under pavers?

Exactly 1 inch of bedding sand, screeded flat over the compacted stone base — more is not better; thick sand layers shift and rut. Use concrete sand, not play sand or mason sand.

What kind of sand for what job?

Concrete (sharp) sand for paver bedding and concrete mixes; mason sand for mortar; polymeric sand for paver joints; play sand only for sandboxes — it's too round and fine to lock up structurally.
